A Twist on Har'ts Grandma's Quiche

I love making any sort of quiche! They are so easy and you can throw in whatever you have and it is great! Usually, I make a sausage & spinach version of Hart's Grandma's Chicken and Broccoli Quiche. The basic recipe is the same. However, instead of using store bought pie crusts OR going to the opposite extreme of making your own... Do you KNOW how much BUTTER is in a pie crust?! A LOT! .... I actually have found a lower calorie, more healthy option and that is to use tortilla's!
Yes! You heard me... use a tortilla for the crust! Usually I use 3 smaller wheat tortillas, but for some reason I had one HUGE white flour tortilla left, so that is what I used and I just put it in the bottom of my pie pan and it was big enough for my quiche. The filling kind of bubbled over on the sides, but it's okay. If you have smaller tortillas place one in the bottom of the pie dish, then divide the other two in half and put them on the sides, overlapping on the bottom tortilla if necessary.  Fill with your filling and bake!

Hart's Grandma's Chicken and Broccoli Quiche (actually published in a church cookbook a couple years ago)

3 c. cooked chicken, diced
1 (10 oz pkg. frozen chopped broccoli, cooked and drained
4 T flour
2 c. shredded sharp cheddar cheese
1 c. milk
4 eggs, lightly beaten
2 ready to bake pie shell OR my tortilla crust version ;)

Mix chicken, broccoli, flour, cheese, milk and eggs together in a large bowl. Pour into the 2 ready to bake pie shells. Bake at 350 degrees for 1 hour.

Or if you want to make a different version you can try sausage and spinach, peppers (red and green) and onions! Yum! Or whatever you have in your fridge!

Cook your sausage & drain.
 Sautee your peppers and onions.
 Throw in some spinach!
 Mix the other ingredients in a large bowl.
 Pour in your pie pan!
 Bake at 350 for an hour... and eat...
